For litti covering:
2 cup aata (wheat flour)
1/4 cup ghee/oil for moin
salt
water
For Filling:
1 cup sattu (explanation here)
2 green chillies - finely chopped
1/4 tsp ginger paste
chopped fresh cilantro
1/2 tsp ajwain
1 tsp amchur (dried mango powder)
1 tbsp lemon juice
1 tbsp mustard oil
half a "bhari mirch achar" (stuffed red chilli pickle) and 2-3tbsp
achar oil
salt to taste
Method:

Method:
- Mix the ghee/oil moin, salt and aata together.Then add water and make it into a tight dough.Cover and keep aside.
- Make the filling by mixing all the ingredients for the filling together.Divide the dough into 7-8 equal sized balls.
- Take each ball and flatten a little with hands.Make a depression in the ball, put in the filling and close the ball
- (just like you would when making a stuffed paratha, though do not flatten the stuffed balls).
- Now heat the oven to 400F and place the filled balls on a foil.
- When they turn golden brown, turn them over and let the other side turn brown too.
