Litti Chokha Recipe

Ingredients:
For litti covering:
2 cup aata (wheat flour)
1/4 cup ghee/oil for moin
salt
water

For Filling:
1 cup sattu (explanation here)
2 green chillies - finely chopped
1/4 tsp ginger paste
chopped fresh cilantro
1/2 tsp ajwain
1 tsp amchur (dried mango powder)
1 tbsp lemon juice
1 tbsp mustard oil
half a "bhari mirch achar" (stuffed red chilli pickle) and 2-3tbsp
achar oil
salt to taste

Method:
  1. Mix the ghee/oil moin, salt and aata together.Then add water and make it into a tight dough.Cover and keep aside.
  2. Make the filling by mixing all the ingredients for the filling together.Divide the dough into 7-8 equal sized balls.
  3. Take each ball and flatten a little with hands.Make a depression in the ball, put in the filling and close the ball
  4. (just like you would when making a stuffed paratha, though do not flatten the stuffed balls).
  5. Now heat the oven to 400F and place the filled balls on a foil.
  6. When they turn golden brown, turn them over and let the other side turn brown too.

Til Kut

Ingredients:
1 cup Til(sesame seed)
1 can Condensed Milk
1/2 stick Butter
1 cup Milk Powder
1 cup Jaggery

How to make Til Kut:
  • Roast the sesame seeds in a dry skillet.
  • Grind them coarsely in a blender.
  • Now heat the jaggery in a thick bottomed vessel till it melts completely.
  • Mix all the ingredients along with grounded sesame seeds in a glass dish.
  • Microwave the mixture for about 3 minutes.
  • Grease a tray with butter and leave aside.
  • Stir the mixture properly and microwave again for 3 minutes.
  • Remove it when bubbling starts.
  • Stir till it becomes thick.
  • Spread the mixture on greased tray.
  • Cut in squares when cool.
  • Til Kut is ready.

Sattu Paratha (Sattu Roti)

For Making SATTU
Ingredients:
1. Roasted Chana Dal - 2cups
2. Roasted Cumin Seeds - 1tsp

Method: Make a smooth powder and filter it (very fine powder)

For Making Stuff:
1. Roasted Chana dal Powder (SATTU) - 2cups
2. Garlic - 3cloves (Chopped Finely or Grated)
3. Red Onion - 4tsp finely chopped
4. Ginger - 1/2tsp (Grated)
5. Green Chili - 3pcs chopped
6. Coriander Leaves - 2tsp chopped
7. Lime Juice - 2tsp
8. Ajwain - 1/4th tsp
9. Mango Pickle - 2pcs mashed
or
Red Mirch Filling Pickle 1pcs
10. Salt To taste
11.Mustard Oil - 1tsp

Method:Mix all the ingredients with sattu and add 2tsp water to make the stuffing moist and easy to fill.

For Making Atta Dough:
Ingredients:
1. Wheat Flour (ATTA) - 3cups
2. Oil/ Ghee - 2tsp
3. Salt - 1/4th tsp

Method: Mix wheat flour, ghee ,salt & required amount of water to make a soft dough.

For Making Sattu Paratha:
Method:
1. Divide the dough into small portion and roll it into round shape.
2. Place a portion of the sattu mixture (approx 2tsp) in the middle, enfold the filling and pinch off the excess dough.Then roll out the Paratha.
3. Cook on hot tawa or flat pan, applying oil/ghee till both sides are cooked and light brown in colour.
4. Serve Hot with Chutney, pickle aur Sauce.
5. It can be served as supper or dinner time.

Khaja

Ingredients:
1-1/2 Cup flour
1 tbsp Ghee
1/2 Cup jaggery
1/4 tbsp Cardamom powder

How to make Khaja:
  • Heat 1 cup water and dissolve jaggery in it.
  • Strain the solution and cool it.
  • Add ghee and cardamom powder in the flour.
  • Knead this mixture with jaggery water.
  • Make the dough stiff. Divide it into 25 parts.
  • Roll out 4'' rounds from these parts.
  • Leave aside to make them a bit dry.
  • Fry in hot ghee until colour turns golden brown.
  • Remove and cool till the khajas becomes crispy.
  • Khaja is ready to serve.
