Litti Chokha Recipe

Ingredients:
For litti covering:
2 cup aata (wheat flour)
1/4 cup ghee/oil for moin
salt
water

For Filling:
1 cup sattu (explanation here)
2 green chillies - finely chopped
1/4 tsp ginger paste
chopped fresh cilantro
1/2 tsp ajwain
1 tsp amchur (dried mango powder)
1 tbsp lemon juice
1 tbsp mustard oil
half a "bhari mirch achar" (stuffed red chilli pickle) and 2-3tbsp
achar oil
salt to taste

Method:
  1. Mix the ghee/oil moin, salt and aata together.Then add water and make it into a tight dough.Cover and keep aside.
  2. Make the filling by mixing all the ingredients for the filling together.Divide the dough into 7-8 equal sized balls.
  3. Take each ball and flatten a little with hands.Make a depression in the ball, put in the filling and close the ball
  4. (just like you would when making a stuffed paratha, though do not flatten the stuffed balls).
  5. Now heat the oven to 400F and place the filled balls on a foil.
  6. When they turn golden brown, turn them over and let the other side turn brown too.

Til Kut

Ingredients:
1 cup Til(sesame seed)
1 can Condensed Milk
1/2 stick Butter
1 cup Milk Powder
1 cup Jaggery

How to make Til Kut:
  • Roast the sesame seeds in a dry skillet.
  • Grind them coarsely in a blender.
  • Now heat the jaggery in a thick bottomed vessel till it melts completely.
  • Mix all the ingredients along with grounded sesame seeds in a glass dish.
  • Microwave the mixture for about 3 minutes.
  • Grease a tray with butter and leave aside.
  • Stir the mixture properly and microwave again for 3 minutes.
  • Remove it when bubbling starts.
  • Stir till it becomes thick.
  • Spread the mixture on greased tray.
  • Cut in squares when cool.
  • Til Kut is ready.
